This Everything Cheddar, Tomato, and Brie Grilled Cheese sandwich combines the rich creaminess of Brie with sharp cheddar and fresh basil, layered with juicy tomato slices and seasoned with everything bagel spice. Buttered sourdough is toasted to golden perfection in a skillet, resulting in a flavorful and crispy gourmet sandwich ideal for a quick, satisfying meal.

Ingredients

Tomato Preparation

  • 1 tomato, thinly sliced
  • 1 teaspoon white balsamic vinegar
  • Sea salt and black pepper, to taste

Sandwich Ingredients

  • 4 slices sourdough bread
  • 3/4 cup grated sharp cheddar cheese
  • 2-4 ounces torn Brie (rind on)
  • 1/4 cup fresh basil, chopped
  • Honey, to drizzle (optional)

Butter Mixture

  • 4 tablespoons salted butter, at room temperature
  • 1 tablespoon mayonnaise (optional)
  • 2 tablespoons grated Asiago cheese
  • 2-4 tablespoons everything bagel spice (optional, recipe in notes)

Instructions

  1. Prepare the tomato slices: Arrange the thinly sliced tomato on a cutting board, sprinkle with sea salt and black pepper, and let sit for 15 minutes to draw out excess moisture and intensify flavor.
  2. Mix the cheeses and basil: In a bowl, combine the grated sharp cheddar cheese, torn Brie pieces (with rind on), and chopped fresh basil until evenly mixed.
  3. Prepare the butter mixture: In a separate bowl, blend the room temperature salted butter, optional mayonnaise, grated Asiago cheese, and everything bagel seasoning thoroughly until well combined.
  4. Assemble the sandwiches: Spread the butter mixture evenly on one side of each slice of sourdough bread. On the non-buttered side, layer the cheese and basil mixture, then add the tomato slices. Top with another slice of bread, buttered side facing outward. Repeat for the second sandwich.
  5. Cook the sandwiches: Heat 1 to 2 tablespoons of butter or oil in a large skillet over medium heat. Place the sandwiches in the skillet and cook for 3 to 5 minutes per side until the bread is golden brown and crisp and the cheese is melted.
  6. Serve: Optionally drizzle with honey for a touch of sweetness, then slice and serve the sandwiches immediately while warm and gooey. Enjoy your gourmet grilled cheese!

Notes

  • Letting the tomato sit with salt and pepper helps remove excess moisture so the sandwich doesn't become soggy.
  • Keeping the Brie rind on adds extra flavor and texture but can be removed if preferred.
  • Everything bagel seasoning adds a savory crunch and aroma; if unavailable, a mix of sesame seeds, poppy seeds, dried garlic, and onion flakes can be used.
  • Mayonnaise in the butter mixture is optional but helps create a creamier spread and better browning.
  • Use a good quality sourdough bread for best texture and flavor.
  • Drizzling honey adds a delightful contrast to the savory sandwich but is optional.
