Ingredients

Main Filling

  • ½ pound deli-sliced roast beef, diced (about ½ inch pieces)
  • 4 ounces deli-sliced provolone cheese, diced (about ½ inch pieces)
  • 8 ounces cream cheese, softened
  • ½ tablespoon onion soup mix (from 1 tablespoon divided)

Dough & Topping

  • 2 cans crescent roll dough
  • 4 tablespoons unsalted butter, melted
  • ½ tablespoon onion soup mix (remaining)

Au Jus

  • 1 ounce package au jus gravy mix
  • 3 cups cold water

Garnish

  • Fresh chopped parsley (optional)

Instructions

  1. Preheat and prepare pans: Preheat your oven to 375°F (190°C). Line two sheet pans with parchment paper and set them aside to prevent sticking.
  2. Chop roast beef and provolone: Dice the deli-sliced roast beef and provolone cheese into half-inch to one-inch pieces for easy mixing and filling.
  3. Mix the filling: In a large mixing bowl, combine the diced roast beef, provolone cheese, softened cream cheese, and ½ tablespoon of the onion soup mix. Use an electric hand mixer to blend everything until well combined and creamy.
  4. Prepare crescent dough: Unroll one can of crescent dough at a time and separate it into individual triangles. Cut each triangle in half lengthwise to form two long, narrow triangles.
  5. Fill and roll crescents: Place about 1 heaping teaspoon of the prepared filling onto the wider end of each crescent triangle. Carefully roll the dough over the filling to create crescent shapes. Arrange them on the prepared sheet pans, making sure they are not touching.
  6. Repeat filling process: Continue filling and rolling the remaining dough and filling until all crescents are formed and placed on the pans.
