These Frozen Yogurt Covered Blueberries are a refreshing and healthy treat perfect for a guilt-free snack. Bursting with juicy blueberries coated in creamy Greek yogurt and a hint of sweetness from maple syrup and lemon zest, they create a delightful bite-sized cluster. You can enjoy them plain or elevate them by dipping in melted chocolate or peanut butter for an indulgent twist.

Ingredients

Fruit and Yogurt Mixture

  • 2 cups blueberries
  • 1 cup Greek yogurt
  • 2-3 teaspoons maple syrup or honey
  • 2-3 teaspoons lemon zest

Coating (Optional)

  • Melted peanut butter
  • Melted chocolate

Instructions

  1. Prepare the baking sheet: Line a baking sheet with parchment paper to prevent sticking and make removal easier after freezing.
  2. Mix the blueberries and yogurt: In a mixing bowl, combine the blueberries with the Greek yogurt, maple syrup or honey, and lemon zest. Stir gently to coat the blueberries evenly without breaking them.
  3. Scoop onto baking sheet: Using a spoon, place small dollops of the blueberry-yogurt mixture onto the lined baking sheet. Space them apart to prevent sticking together.
  4. Freeze until set: Place the baking sheet in the freezer and freeze the clusters for at least 1 hour or until firm.
  5. Optional coating: Once frozen, enjoy the clusters as they are or dip and coat them in melted chocolate or peanut butter. If coated with chocolate, allow it to harden immediately. For peanut butter coating, place the dipped clusters back in the freezer to firm up the coating.

Notes

  • Use fresh, firm blueberries for the best texture.
  • You can adjust the sweetness by varying the amount of maple syrup or honey.
  • For a dairy-free version, substitute Greek yogurt with a plant-based yogurt.
  • Store the frozen clusters in an airtight container in the freezer to maintain freshness.
  • If melting chocolate, do so gently using a double boiler or microwave in short increments to prevent burning.
  • These treats can also be served as a healthy dessert or snack during warm weather.
