Garlic Butter Chicken Bites are tender, juicy pieces of chicken breast cooked to golden perfection and tossed in a rich garlic butter sauce with a hint of lemon and fresh parsley. This quick and easy recipe offers a savory and flavorful meal perfect for weeknights, with options for stovetop or air fryer cooking methods.

Ingredients

Dry Mixture

  • 2 tablespoons all-purpose flour
  • 1 teaspoon kosher salt
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon granulated garlic

Chicken

  • 1 pound boneless skinless chicken breast, cut into 1 to 1 1/2 inch pieces

Cooking

  • 2 tablespoons olive oil
  • 1 tablespoon grated garlic (from about 6 garlic cloves)
  • 1/4 cup dry white wine
  • 4 tablespoons unsalted butter, cubed
  • 1/2 tablespoon fresh lemon juice
  • Chopped parsley, for garnish

Instructions

  1. Prepare the coating: In a medium bowl, whisk together flour, kosher salt, Italian seasoning, and granulated garlic until evenly combined. Add the chicken pieces and toss until they are evenly coated with the mixture.
  2. Cook chicken on stovetop: Heat olive oil in a large non-stick skillet over medium-high heat until shimmering. Place coated chicken pieces in an even layer and cook undisturbed for about 4 minutes to brown one side. Flip and cook another 4 minutes until the chicken is browned and cooked through. Transfer chicken to a clean plate and wipe the skillet clean.
  3. Alternative air fryer method: Preheat the air fryer to 400°F (200°C) for 5 minutes. Lightly coat the air fryer basket with cooking spray, arrange chicken pieces in a single layer, and lightly spray the tops. Cook for about 14 minutes, flipping once halfway through, until golden brown and cooked through.
  4. Prepare garlic butter sauce: Reduce the stovetop heat to medium. Add the grated garlic to the cleaned skillet and cook, stirring constantly, for 1 to 2 minutes until fragrant and slightly browned. Pour in the dry white wine and cook, stirring often, until most of the wine evaporates, about 2 minutes.
  5. Finish the sauce and combine: Add the cubed unsalted butter and fresh lemon juice to the skillet. Stir and cook until the butter is fully melted, about 1 minute. Return the cooked chicken to the skillet and toss until all pieces are evenly coated with the garlic butter sauce.
  6. Serve: Transfer the chicken bites to a serving platter and garnish with chopped parsley. Serve immediately for best flavor and texture.

Notes

  • You can use chicken thighs instead of breasts for a juicier texture.
  • If you prefer non-alcoholic, substitute dry white wine with chicken broth or water.
  • Ensure chicken pieces are evenly sized for consistent cooking.
  • Adjust lemon juice to taste for more or less acidity.
  • Use fresh garlic for the best flavor rather than pre-minced garlic.
  • Make sure not to overcrowd the pan or air fryer basket to allow even browning.
