Ingredients

Shrimp and Marinade

  • 2 pounds large tail-on shrimp, peeled and deveined (about 30 to 35 shrimp)
  • 3 garlic cloves, minced
  • ½ cup (1 stick) salted butter, melted
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon garlic powder
  • ¼ teaspoon sea salt
  • 2 tablespoons minced fresh flat-leaf parsley, plus more for serving
  • 1 lemon, cut into wedges, for serving

Instructions

  1. Preheat the grill: Preheat your grill or grill pan to medium-high heat to ensure it reaches the right temperature for cooking the shrimp evenly and achieving a nice char.
  2. Prepare the garlic butter: In a large bowl, whisk together the melted butter, minced garlic, paprika, cayenne pepper, garlic powder, sea salt, and minced parsley until well combined. Set aside ¼ cup of this garlic butter mixture in a separate small bowl for later brushing.
  3. Marinate and skewer the shrimp: Add the shrimp to the remaining garlic butter mixture in the large bowl and toss well to coat every piece evenly. Thread the shrimp onto 6 skewers, ensuring they are divided evenly for uniform cooking.
  4. Grill the shrimp: Place the shrimp skewers on the preheated grill or grill pan. Cook without moving them for 3 to 4 minutes to allow a nice sear. Flip the skewers over and continue grilling for another 3 to 4 minutes until the shrimp are lightly charred and cooked through.
