This Garlic Parmesan Rice recipe is a creamy and flavorful side dish made with long grain white rice cooked in a savory mixture of chicken broth, whole milk, garlic, and butter, then finished with freshly grated Parmesan cheese and fresh parsley. Perfectly tender and fluffy, this dish pairs wonderfully with a variety of main courses and can be whipped up in just 25 minutes.

Ingredients

Rice and Liquid

  • 1 cup long grain white rice (not instant or brown)
  • 8 ounces chicken broth
  • 8 ounces whole milk

Flavorings

  • 3 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Rinse Rice: Add your rice to a fine mesh sieve and rinse under cold water to remove surface starches. This step ensures the rice cooks fluffy with separate grains instead of becoming sticky or gummy.
  2. Sauté Garlic: In a medium saucepan over medium heat, melt the butter. Add the minced garlic and cook until it starts to lightly brown and releases a fragrant aroma, about 1 minute.
  3. Add Liquids and Rice: Stir in the rinsed rice, chicken broth, whole milk, salt, and pepper until all are combined evenly in the pan.
  4. Simmer: Bring the mixture to a gentle simmer. Then cover the saucepan and reduce the heat to low, almost off, to gently cook the rice without lifting the lid to preserve steam.
  5. Cook Rice: Let the rice cook covered for 18 to 20 minutes, until the rice is tender and most of the liquid has been absorbed. Avoid lifting the lid during this time to prevent disrupting the cooking process.
  6. Finish and Serve: Remove the pan from heat. Stir in the freshly grated Parmesan cheese and chopped parsley gently. Fluff the rice with a fork and serve warm as a delicious side dish.

Notes

  • Use long grain white rice for the best texture; instant or brown rice will yield different results.
  • Rinsing the rice before cooking helps to avoid sticky, gummy grains.
  • Do not lift the lid while cooking to maintain the proper steaming environment.
  • For a vegetarian version, substitute chicken broth with vegetable broth.
  • Freshly grated Parmesan imparts the best flavor; pre-grated cheese may not melt as well.
