Ingredients

Bread

  • 2 slices bread (white, wheat, multi-grain, or milk bread)

Vegetables

  • 3 ounces green cabbage, yangbaechu (양배추), about 1 cup packed (up to 4 ounces)
  • ½ small carrot (about 0.5 ounces)
  • ¼ small onion (about 0.5 ounces)
  • 2 stalks garlic chives, buchu (or 1 small scallion)

Egg Mixture

  • 1 large egg
  • salt and pepper to taste

Other Ingredients

  • 2 tablespoons butter (or margarine or olive oil), divided
  • sugar to taste (Halmeoni Toast uses a heaping tablespoon)
  • ketchup to taste

Instructions

  1. Prepare the vegetables: Thinly slice the cabbage, onion, and carrot. Cut the garlic chives into 1.5-inch lengths. If using a scallion, slice diagonally thinly.
  2. Toast the bread: Heat a large non-stick pan over medium heat. Melt butter or margarine as needed. Place both bread slices in the pan, move them around and flip to toast each side until golden-brown, about 1 to 2 minutes per side. Remove and set aside on a plate.
  3. Mix egg and vegetables: In a small, deep bowl or cup, combine the veggies (reserving about one-fifth) with a pinch of salt. Crack in the egg and mix well, pressing down with tongs or a fork until the mixture is uniform and volume is reduced, about 20 seconds.
  4. Cook the vegetable omelet: Return the pan to medium heat and melt more butter. Pour in the egg and vegetable mixture, flatten and shape it into a large round with a spatula. Sprinkle the reserved vegetables on top. Cook until the bottom is lightly golden, about 3 minutes. Carefully flip the omelet, add more butter, and cook the other side for about 2 minutes until cooked through and golden.
  5. Assemble the toast: Place the cooked omelet on one slice of toasted bread. Sprinkle sugar over the omelet to taste—Halmeoni Toast uses about a heaping tablespoon. Add a generous squirt of ketchup on top. Cover with the second slice of bread, press gently, and serve immediately.
