Ingredients

Overnight Oats

  • 2 cups gluten-free rolled oats

  • 2 1/2 cups unsweetened milk of choice
  • 2 tablespoons pure maple syrup

Gingerbread Spice Mix

  • 3/4 teaspoon allspice
  • 3/4 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon kosher salt
  • Pinch ground black pepper

Instructions

  1. Make the gingerbread spice mix: In a small bowl, combine all the individual spices— allspice, ground ginger, cinnamon, cloves, nutmeg, kosher salt, and black pepper. Stir well to blend evenly.
  2. Combine dry ingredients: In a large bowl, mix together the gluten-free rolled oats, vanilla protein powder, chia seeds, and prepared gingerbread spice mix to ensure the spices are evenly distributed within the oats.
  3. Add wet ingredients and sweetener: Pour in the unsweetened milk of choice and the pure maple syrup to the dry mixture. Whisk all ingredients together thoroughly until the protein powder dissolves and you have a uniform mixture.
  4. Portion and refrigerate: Divide the oat mixture evenly among four containers or jars with lids. Seal them and refrigerate for at least 6 hours or preferably overnight to allow the oats and chia seeds to absorb the liquid and become creamy.
  5. Serve with topping: When ready to eat, top each jar with 1/2 cup of whole milk or low-fat Greek yogurt or your choice of dairy-free yogurt. Enjoy cold or use optional notes to warm.
