This Gingery Ground Beef Soboro Donburi is a quick and flavorful Japanese-inspired dish featuring savory ground beef cooked with fresh ginger, soy sauce, and sweet brown sugar, combined with tender peas. Served over steamed rice, it makes a comforting and satisfying meal perfect for busy weeknights.

Ingredients

Ground Beef Mixture

  • 1 pound 90/10 ground beef
  • ¼ cup low sodium soy sauce or tamari
  • ¼ cup water
  • 1 tablespoon brown sugar
  • 1 tablespoon minced peeled fresh ginger

Vegetables

  • 1 cup frozen peas

To Serve

  • Cooked rice, for serving (optional)

Instructions

  1. Cook the Ground Beef: In a large skillet over medium-high heat, combine the ground beef, soy sauce or tamari, ¼ cup water, brown sugar, and minced fresh ginger. Cook, breaking the meat up with a wooden spoon, until the beef is browned and cooked through, about 8 minutes.
  2. Add the Peas: Stir in the frozen peas to the skillet mixture, then continue cooking while stirring occasionally, allowing most of the liquid to evaporate. This should take about 5 more minutes and will ensure the peas are warmed through and the flavors meld.
  3. Serve: Spoon the gingery ground beef and peas over cooked rice if desired. The dish is best enjoyed hot and makes a great quick meal option.

Notes

  • You can substitute tamari for soy sauce to make this gluten-free.
  • Adjust the amount of ginger according to your preference for spiciness and aroma.
  • For added texture and nutrition, try mixing in finely chopped green onions or toasted sesame seeds before serving.
  • This recipe is best made with lean ground beef to reduce excess fat but can be adjusted to your liking.
  • If you prefer, substitute peas with other vegetables such as edamame or diced carrots.
