Greek Chicken Bites are tender, flavorful pieces of chicken marinated in lemon juice and traditional Greek spices, then pan-seared to perfection. Perfectly juicy and seasoned with oregano, garlic, and dill, these bites make a delicious appetizer or main dish served alongside tzatziki, pita bread, and a refreshing Greek salad.

Ingredients

Chicken and Marinade

  • 16 oz chicken breasts, cut into bite-sized pieces
  • 2 tablespoons lemon juice
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried dill
  • 1 tablespoon olive oil (for marinade)

For Cooking

  • 2 tablespoons olive oil (for cooking)

Optional for Serving

  • Tzatziki sauce
  • Pita breads
  • Greek salad

Instructions

  1. Marinate the chicken: Cut the chicken breasts into bite-sized pieces and place them in a bowl. Add 1 tablespoon of olive oil, lemon juice, dried oregano, garlic powder, salt, black pepper, and dried dill. Toss everything together until the chicken is well-coated. Cover the bowl and refrigerate for at least 1 hour to allow the flavors to infuse.
  2. Heat the skillet: Place a large skillet over medium-high heat and add 2 tablespoons of olive oil. Allow the oil to heat until shimmering, which ensures a good sear on the chicken pieces.
  3. Cook the chicken: Arrange the marinated chicken pieces in a single layer in the hot skillet. Let them cook undisturbed for about 5 minutes to develop a golden crust. Then flip each piece and cook for an additional 3 to 5 minutes until the chicken is thoroughly cooked and juicy inside.
  4. Serve warm: Transfer the cooked chicken bites to a serving plate. Serve immediately with optional sides such as creamy tzatziki sauce, warm pita breads, and a fresh Greek salad for a complete Mediterranean meal.

Notes

  • For best flavor, marinate the chicken overnight if time permits.
  • Ensure the skillet is hot before adding chicken to get a nice sear and avoid sticking.
  • You can substitute chicken thighs for a juicier result, adjusting cooking time accordingly.
  • Leftover chicken bites can be refrigerated for up to 3 days and reheated gently in a skillet.
