This Grilled Cheese Burrito combines the rich flavors of seasoned ground beef, creamy nacho cheese sauce, and melty cheddar and mozzarella cheeses all wrapped in a warm flour tortilla. Ingredients

Beef Mixture

  • 1 lb ground beef

  • 1/4 cup water

Fillings

  • 1 cup cooked white rice
  • 1/2 cup sour cream
  • 1/2 cup nacho cheese sauce
  • 1/4 cup chipotle sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese

  • 4 large flour tortillas
  • Butter or oil for grilling

Instructions

  1. Cook the Beef: In a skillet over medium heat, brown the ground beef for 8 to 10 minutes until fully cooked. Drain off any excess grease. Stir in the taco seasoning and 1/4 cup water, then let it simmer for 5 minutes until the flavors meld.
  2. Warm the Tortillas: Heat the flour tortillas on a dry skillet or microwave briefly to make them more pliable for wrapping.
  3. Assemble the Burrito: Lay a warm tortilla flat. Layer evenly with cooked white rice, the seasoned beef mixture, nacho cheese sauce, chipotle sauce, and sour cream. Top everything with shredded cheddar and mozzarella cheeses.
  4. Grill the Burrito: Heat a clean skillet and sprinkle 2 tablespoons of shredded cheese on it. Place the assembled burrito seam-side down onto the cheese in the skillet. Cook for 3 to 4 minutes until the cheese melts and creates a crispy crust. Flip the burrito and repeat on the other side, ensuring an evenly crispy and cheesy exterior.
