A delicious and nutritious Grilled Feta and Spinach Sandwich featuring sautéed spinach seasoned with dill and layered with creamy feta cheese on whole-grain bread, perfectly grilled to a golden crisp.

Ingredients

Cheese

  • 1 ½ - 2 ounces (45-60 g) feta cheese, sliced thinly

Vegetables

  • 3-4 oz (100-120 g) frozen spinach

Other Ingredients

  • 1-2 tbsp extra virgin olive oil, divided
  • 1 pinch fine sea salt
  • ¼ tsp dry or fresh dill
  • Freshly ground black pepper, to taste

Bread

  • 2 large slices whole-grain bread

Instructions

  1. Slice the feta: Thinly slice 1 ½ - 2 ounces of feta cheese to prepare for layering inside the sandwich.
  2. Sauté the spinach: Heat 1 teaspoon of extra virgin olive oil in a small pan over medium heat. Add the frozen spinach, a pinch of salt, freshly ground black pepper, and ¼ teaspoon of dill. Cook the spinach for a few minutes until any excess liquid has evaporated. Remove from heat.
  3. Prepare the bread: Brush both sides of the two slices of whole-grain bread with olive oil to ensure crispiness and prevent sticking during grilling.
  4. Assemble the sandwich: Heat a medium pan over medium heat. Place one slice of the oiled bread in the pan. Layer thin slices of feta cheese on the bread, then add the sautéed spinach, and continue layering with the remaining feta slices on top.
  5. Grill the sandwich: Cook the sandwich for about 3 to 4 minutes on one side until the bread turns golden brown. Then carefully flip the sandwich over and grill for a few more minutes until the cheese softens and slightly melts.
  6. Serve: Remove the sandwich from the pan and serve immediately while warm and gooey.

  • You can substitute fresh spinach for frozen, but reduce sautéing time accordingly.
  • Use whole-grain bread for added fiber and nutrition.
  • Adjust dill quantity based on preference—fresh dill provides a brighter flavor.
