Instructions
Heat oil: Heat the extra virgin olive oil in a large skillet or wok over medium-high heat to prepare for cooking the beef.
Cook ground beef: Add the ground beef to the hot skillet and cook until browned, stirring and breaking it apart with a spatula, approximately 5 minutes.
Add spices: Stir in the minced ginger, garlic powder, onion powder, black pepper, and optional brown sugar. Cook for an additional 2 minutes to develop the flavors.
Cook vegetables: Add the sliced cabbage, thinly sliced red bell pepper, shredded carrots, and sliced green onions to the skillet. Stir-fry the mixture for 5 to 7 minutes until vegetables are tender-crisp.
Prepare and add sauce: In a small bowl, combine the soy sauce and apple cider vinegar. Pour this sauce over the beef and vegetable mixture in the skillet.
Combine and finish cooking: Stir the skillet contents thoroughly to coat everything in the sauce. Continue cooking for another 2 to 3 minutes, stirring occasionally, then remove from heat.
Serve and garnish: Transfer the stir-fry to a serving dish and sprinkle sesame seeds over the top as garnish before serving.
Notes
For a lower sodium option, use low-sodium soy sauce.
You can substitute ground turkey or chicken for beef if preferred.

Brown sugar is optional but balances the acidity of vinegar nicely.
