Ingredients

Main Ingredients

  • 1 pound ground turkey
  • 15 oz corn, drained and rinsed
  • 15 oz petite diced tomatoes
  • 16 oz kidney beans, drained and rinsed
  • 16 oz black beans, drained and rinsed
  • 8 oz salsa
  • 1 oz taco seasoning
  • 14 oz vegetable broth

Instructions

  1. Cook Ground Turkey: In a large pot over medium heat, cook and crumble the ground turkey until browned and fully cooked. Drain any fat from the pot and return the turkey to the stove top.
  2. Add Ingredients: Drain and rinse the corn, kidney beans, and black beans. Add all the beans, corn, diced tomatoes, salsa, taco seasoning, and vegetable broth to the pot with the cooked turkey. Stir to combine evenly.
  3. Simmer the Soup: Cover the pot with a lid and let the soup simmer gently on low heat for 30 minutes to allow the flavors to meld together and the soup to thicken slightly.
  4. Serve and Garnish: Ladle the soup into bowls and top with your favorite taco toppings such as sour cream, shredded cheese, tortilla chips, and fresh cilantro for extra flavor and texture.
