This Hamburger Potato Casserole is a comforting and hearty family favorite featuring layers of seasoned ground beef, creamy mushroom sauce, tender sliced potatoes, and melted cheddar cheese. Perfect as a warming main dish, it combines simple ingredients into a deliciously satisfying casserole that appeals to both kids and adults alike.

Ingredients

Main Ingredients

  • 1 pound lean ground beef
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • ¾ cup milk
  • ½ cup chopped onion
  • Salt and ground black pepper to taste
  • 3 cups peeled and thinly sliced potatoes
  • 1 cup shredded Cheddar cheese

Instructions

  1. Preheat the oven: Set your oven to 350 degrees F (175 degrees C) to ensure it is fully heated when you're ready to bake the casserole.
  2. Cook the ground beef: Heat a large skillet over medium-high heat. Add the ground beef and cook, stirring frequently, until the meat is browned and crumbly, about 5 to 7 minutes. Drain and discard any excess grease to keep the dish from being too oily.
  3. Prepare the sauce mixture: In a medium bowl, combine the condensed cream of mushroom soup, milk, chopped onion, and salt and pepper to taste. Stir well until the mixture is smooth and uniform.
  4. Assemble the casserole: In a 2-quart baking dish, layer the ingredients by placing a layer of sliced potatoes first, followed by a layer of the soup mixture, and then a layer of the browned ground beef. Repeat layers until all ingredients are used. Cover the dish tightly with aluminum foil.
  5. Bake the casserole: Place the covered baking dish in the preheated oven and bake until the potatoes are tender, about 1 to 1 ½ hours. This slow baking will allow the flavors to meld and the potatoes to cook through perfectly.
  6. Add cheese and finish baking: Remove the foil and sprinkle the shredded Cheddar cheese evenly over the top of the casserole. Return to the oven and bake uncovered for an additional 5 to 10 minutes until the cheese is melted and bubbly.
  7. Serve: Take the casserole out of the oven and let it cool slightly. Serve warm and enjoy this kid-friendly, comforting meal.

Notes

  • You can substitute the mushroom soup with cream of chicken or cream of celery soup for a different flavor profile.
  • Pair this casserole with a green salad or steamed green beans for a balanced meal.
  • For easier slicing of potatoes, use a mandoline or a sharp knife for uniform thin slices ensuring even cooking.
  • Adjust seasoning to taste before baking, especially salt and pepper, depending on your preference.
