Ingredients

Chicken

  • 4 cups shredded rotisserie chicken (480g, 16oz)

Dressing

  • 1 medium avocado (150g)
  • 1 cup plain Greek yogurt (non-fat) (228g)
  • 1 cup fresh parsley (60g)
  • ½ cup fresh dill, loosely packed (4g)
  • ½ cup fresh mint (12g)
  • 1 cup baby spinach
  • ⅓ cup lemon juice (80ml, about large lemons)
  • 2 Tbsp extra virgin olive oil (30ml)
  • 2 garlic cloves
  • ½ tsp salt (3g), more to taste
  • Black pepper, to taste
  • 1-2 Tbsp water (optional, to thin it out)

Optional Add-ins

  • Green onion
  • Red onion
  • Chopped cucumber
  • Mash white beans

Instructions

  1. Shred the chicken. Use your hands or pulse the rotisserie chicken a few times in a food processor until it's shredded to your preferred size. Alternatively, use two forks to shred it manually for a coarser texture.
  2. Blend the dressing. In a food processor or high-speed blender, combine avocado, Greek yogurt, parsley, dill, mint, spinach, lemon juice, olive oil, garlic, salt, and pepper. Blend for 2-3 minutes until smooth and creamy. Add 1-2 tablespoons of water if you want to thin the dressing to your desired consistency.
  3. Combine chicken and dressing. Place the shredded chicken in a large mixing bowl. Pour the dressing over the chicken and mix thoroughly until every piece is well coated with the green goddess dressing.
  4. Add optional mix-ins. If desired, toss in chopped green onions, red onions, cucumbers, or mashed white beans for extra texture and flavor. Mix again to evenly distribute.

Notes

  • This recipe uses rotisserie chicken for convenience, but cooked shredded chicken breast or thighs work well too.
  • Adjust salt and lemon juice to taste to balance the fresh flavors.
  • To make the salad more filling, serve it over mixed greens or with whole grain bread.
  • If you don’t have a food processor, you can finely chop fresh herbs and mash the avocado manually before mixing.
