These Healthy Peanut Butter Banana Cookies are a simple and nutritious treat made with natural nut butters and ripe banana. Perfectly soft and lightly sweetened, these cookies are easy to prepare and require no added flour or refined sugar, making them a wholesome snack option.

Ingredients

Base Ingredients

  • 1/4 cup + 2 tablespoons natural peanut butter*
  • 2 tablespoons all natural almond butter (or swap for peanut butter)*
  • 1 small banana, mashed until no clumps remain
  • 1/2 teaspoon ground cinnamon
  • pinch of sea salt (optional)

Optional Mix-ins/Toppings

  • 1 tablespoon pure maple syrup
  • 1/4 cup mini dark chocolate chips
  • unsweetened shredded coconut
  • hemp seeds

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to ensure it's ready for baking the cookies.
  2. Mash Banana: In a large bowl, thoroughly mash the small banana until there are no clumps remaining to create a smooth base.
  3. Mix Ingredients: Add the peanut butter, almond butter, and ground cinnamon to the mashed banana. Mix well until the batter comes together evenly.
  4. Form Dough: Continue mixing until the dough forms a cohesive ball and no batter clings to the sides of the bowl.
  5. Prepare Baking Sheet: Line a baking sheet with parchment paper to prevent sticking.
  6. Shape Cookies: Roll or scoop the dough into 10 equal balls. Place them spaced evenly on the prepared baking sheet. Use a fork to gently press each ball down to form cookie shapes.
  7. Bake: Place the baking sheet in the preheated oven and bake for about 10 minutes or until the bottoms of the cookies are lightly browned.
  8. Season: Remove cookies from the oven and, if desired, sprinkle a pinch of sea salt on top while they are still warm.
  9. Cool and Serve: Allow the cookies to cool completely on a wire rack or baking sheet before enjoying.

Notes

  • Use natural, unsweetened peanut and almond butters for best flavor and health benefits.
  • Optional mix-ins such as mini dark chocolate chips, shredded coconut, or hemp seeds can be added for extra texture and taste.
  • Make sure the banana is very ripe for natural sweetness and better binding.
  • These cookies are best enjoyed fresh but can be stored in an airtight container for up to 3 days.
  • The sea salt topping is optional but enhances the flavor contrast.
