These Healthy Reese's Eggs are a high-protein, low-sugar treat perfect for a guilt-free indulgence. Made with natural peanut butter, vanilla protein powder, and dark chocolate, they combine creamy peanut flavor with a smooth chocolate coating, shaped into fun egg forms. Quick to prepare and freezer-set, these make a nutritious snack or dessert that satisfies sweet cravings while boosting your protein intake.

Ingredients

Peanut Butter Mixture

  • 1 cup natural peanut butter (stirred well)
  • 1 Tablespoon maple syrup
  • 2 (24g) scoops vanilla protein powder

Chocolate Coating

  • 2 (3-4 oz) bars dark chocolate, chopped (I used Lily’s)
  • Optional: flaky sea salt for sprinkling

Instructions

  1. Prepare Pan: Line a large sheet pan with parchment paper to prevent sticking and facilitate easy freezing of the peanut butter eggs.
  2. Make Peanut Butter Mixture: In a medium mixing bowl, combine the natural peanut butter, maple syrup, and vanilla protein powder. Stir well and let sit for 1-2 minutes to allow the moisture to absorb into the protein powder, firming up the mixture to a slightly soft but manageable texture.
  3. Shape Eggs: Using a small cookie scoop (about a heaping tablespoon), drop spoonfuls of the peanut butter mixture onto the prepared sheet pan. Gently press each into an egg shape using your fingertips. Place the sheet pan in the freezer for at least 15 minutes or overnight to harden the shapes.
  4. Melt Chocolate: Place the chopped dark chocolate into a microwave-safe bowl and melt it in 30-second increments, stirring between each session until the chocolate is completely melted and smooth.
  5. Dip the Eggs: Dip each frozen peanut butter egg top-down into the melted chocolate, then use a fork to flip it over, allowing the chocolate to coat the egg evenly. Lift the egg from the chocolate and gently shake off excess, scraping the bottom on the side of the bowl. Place the chocolate-coated eggs back on the parchment-lined sheet pan. Drizzle additional melted chocolate on top of each and sprinkle with flaky sea salt if desired.
  6. Set Chocolate: Return the dipped eggs to the freezer and set for 10-15 minutes to allow the chocolate to harden completely. Once set, store the eggs in an airtight container either in the refrigerator or freezer.
