Delightfully healthy and naturally sweet, these Strawberry Cheesecake Balls combine fresh strawberries, cashews, and dates into a creamy, bite-sized treat. Perfect as a guilt-free dessert or snack, they are easy to make with simple ingredients and require no baking. Rolled optionally in coconut flakes, these cheesecake balls are refreshing and satisfy your sweet tooth naturally.

Ingredients

Base Ingredients

  • 1/2 cup dates, pitted
  • 1 cup raw cashews
  • 1 cup fresh strawberries (frozen will make them soggy and sticky)
  • 1/4 cup coconut oil, softened
  • 1 tsp vanilla extract
  • 2 tbsp coconut flour

Optional Coating

  • 1/4 cup coconut flakes (optional for rolling)

Instructions

  1. Process Ingredients: Add the dates, raw cashews, fresh strawberries, softened coconut oil, vanilla extract, and coconut flour into a food processor. Blend until the mixture is almost pureed but still has some texture for the perfect cheesecake consistency. Then, allow the mixture to rest for about 10 minutes to let the coconut flour absorb moisture and thicken the blend.
  2. Shape Balls: Using your hands, roll the thickened mixture into 12 equal-sized balls. For added texture and flavor, roll each ball in coconut flakes if desired.
  3. Freeze to Set: Place the formed cheesecake balls on a tray and freeze them for at least 2 hours to firm up properly.
  4. Serve: Before serving, let the balls sit at room temperature for approximately 10 minutes to soften slightly, making them even more enjoyable. Then, dig in and enjoy your healthy treat!

Notes

  • Use fresh strawberries instead of frozen to avoid sogginess.
  • Coconut flour thickens the mixture; resting allows it to absorb moisture properly.
  • Rolling in coconut flakes is optional but adds texture and flavor.
  • Store the cheesecake balls in the freezer to maintain firmness.
  • Letting them soften at room temperature enhances the creamy texture before eating.
