These healthy strawberry muffins are a wholesome and delicious treat made with whole wheat flour, rolled oats, fresh strawberries, and natural sweeteners like maple syrup. Perfect for a nutritious breakfast or snack, they offer a moist, tender crumb with a hint of lemon zest for extra freshness.

Ingredients

Dry Ingredients

  • 1¼ cups whole wheat flour
  • ½ cup rolled oats
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Wet Ingredients

  • 1 cup milk
  • ⅓ cup maple syrup (or honey)
  • ¼ cup unsalted butter (melted and slightly cooled, or substitute with avocado or coconut oil)
  • 2 eggs (lightly beaten)
  • 1 teaspoon pure vanilla extract

Fruit and Flavoring

  • 1 cup diced strawberries (stems removed)
  • 1 tablespoon fresh lemon zest (optional but recommended)

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 375°F (190°C) and grease a standard 12-cup muffin tin with nonstick spray to ensure muffins don’t stick and come out easily.
  2. Mix Dry Ingredients: In a medium bowl, combine whole wheat flour, rolled oats, baking powder, baking soda, and salt thoroughly to evenly distribute leavening agents and seasoning.
  3. Combine Wet Ingredients and Fruit: Add the milk, maple syrup (or honey), melted butter (or oil), lightly beaten eggs, vanilla extract, diced strawberries, and fresh lemon zest if using, into the dry ingredients. Stir gently until just combined to avoid overmixing which can make muffins dense.
  4. Fill Muffin Cups: Evenly divide the batter into the prepared muffin tin cups using about ¼ cup of batter per muffin, filling each cup to ensure uniform baking.
  5. Bake: Bake the muffins in the preheated oven for 16-18 minutes or until a cake tester or toothpick inserted into the center of a muffin comes out clean, indicating they are fully cooked.
  6. Cool and Serve: Remove muffins from the oven, allow them to cool for a couple of minutes in the pan before gently running a paring knife around edges to loosen. Transfer muffins to a wire rack to cool completely. Serve slightly warm or at room temperature for the best flavor and texture.

Notes

  • Using whole wheat flour and oats provides additional fiber for a healthier muffin.
  • Maple syrup or honey adds natural sweetness and moisture.
  • Fresh lemon zest brightens the flavor and enhances the freshness of strawberries.
  • You can substitute unsalted butter with avocado or coconut oil for a dairy-free version.
  • Do not overmix the batter to avoid dense muffins; mix just until ingredients are combined.
  • Store leftover muffins in an airtight container at room temperature for up to 3 days or freeze for longer storage.
