Ingredients

Pie Crust

  • 1 unbaked pie crust (homemade or store-bought)

Filling

  • 1 can cherry pie filling (approximately 21 ounces)

Toppings

  • 1 large egg
  • 1 tablespoon sugar

Instructions

  1. Preheat Oven: Preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper (optional but recommended) and avoid greasing it to ensure the pies bake evenly without sticking.
  2. Roll and Cut Crust: Unroll the pie crust on a lightly floured surface and gently roll it out to about 1/4 inch thickness. Use a heart-shaped cookie cutter to cut out eight heart shapes from the dough.
  3. Fill Pies: Arrange four heart-shaped crusts on the baking sheet. Spoon a generous amount of cherry pie filling onto the center of each heart, spreading it out but leaving about a 1/2 inch border around the edges to allow for sealing.
  4. Seal and Vent: Top each filled heart with one of the remaining hearts. Press the edges firmly together using a fork to seal the pies completely. Cut a small 'X' on the top crust of each pie to create vents for steam to escape during baking, preventing puffing and filling leakage.
  5. Apply Egg Wash and Sugar: Beat the egg with a few splashes of water to create an egg wash. Using a pastry brush, lightly brush the egg wash over the top of each hand pie. Sprinkle each pie with sugar to add a touch of sparkle and sweetness.
  6. Bake: Place the baking sheet in the preheated oven and bake the pies for 25 to 30 minutes, or until the crusts turn a beautiful golden brown color.
  7. Cool and Serve: Remove the pies from the oven and allow them to cool completely on a wire rack before serving to ensure the filling sets and to avoid burns.

Notes

  • Parchment paper is optional but helps with easy cleanup and prevents sticking.
  • Make sure to cut vents in the pie tops to prevent filling leakage and distorted crusts.
  • Allow the hand pies to cool fully to let the filling thicken for better handling.
  • This recipe can be adapted with different pie fillings like apple or blueberry.
  • Use a sharp heart-shaped cookie cutter for clean edges on the pies.
