Instructions

  1. Brown the beef and onion: In a large stockpot, cook the ground beef and chopped onion over medium heat until the beef is fully browned and the onions are tender. Drain off any excess grease to keep the soup from becoming too oily.
  2. Add broth and vegetables: Stir in the diced tomatoes with their juices, beef broth, bay leaves, salt, pepper, diced celery, and frozen mixed vegetables. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 30 minutes to allow the flavors to meld.
