These festive cookies combine a tender, colorful base rolled in red sanding sugar with a melty chocolate center, making them perfect for holiday celebrations or any special occasion.

Ingredients

Cookie Dough

  • 7 tbsp butter (salted or unsalted, softened)
  • 1/2 cup brown sugar
  • 2 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1 large egg yolk
  • 1/4 tsp red food coloring gel
  • 1 cup all-purpose flour
  • 1 tbsp cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Coating and Topping

  • 1/4 cup red sanding sugar
  • 18 Hershey's chocolate kisses

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper to prevent sticking and ensure even baking. Set the baking sheet aside.
  2. Cream Butter and Sugars: In a stand mixer, cream together the softened butter, brown sugar, and granulated sugar until the mixture is smooth and fluffy. This step incorporates air making the cookies tender.
  3. Add Wet Ingredients: Mix in the egg yolk, vanilla extract, and red food coloring gel until everything is fully combined, resulting in a vibrant red dough.
  4. Incorporate Dry Ingredients: Add the all-purpose flour, cocoa powder, baking powder, and salt to the wet mixture. Mix just until no streaks of flour remain to avoid overworking the dough which can make cookies tough.
  5. Shape and Coat Dough Balls: Using a tablespoon, scoop out 18 equal amounts of dough. Roll each portion into smooth balls between your palms, then roll them thoroughly in the red sanding sugar to give a festive sparkle.
  6. Bake the Cookies: Arrange the sugar-coated dough balls spaced evenly on the prepared baking sheet. Bake in the preheated oven for 10 minutes, until the cookies are set but still soft.
  7. Top with Chocolate Kisses: Immediately after removing the cookies from the oven, press one Hershey's chocolate kiss gently in the center of each cookie. The residual heat will slightly melt the chocolate for a perfect finish.
