This Hibachi Vegetables recipe offers a delightful medley of sautéed zucchini, broccoli, mushrooms, and onions cooked to perfection with garlic, soy sauce, and classic hibachi seasonings. Ready in just 25 minutes, it's a quick, flavorful side dish inspired by Japanese teppanyaki-style cooking.

Ingredients

Vegetables

  • 1 large zucchini, cut into 2-inch sticks
  • 3 cups broccoli florets
  • 1 cup mushrooms, sliced
  • 1 large onion, cut into 1-inch pieces

Seasonings & Oils

  • 2 tablespoons vegetable oil
  • 2 tablespoons salted butter
  • 2 teaspoons minced garlic
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon pepper

Instructions

  1. Preheat the Grill or Skillet: Preheat a large griddle or sturdy skillet over medium-high heat to ensure it’s hot enough for the vegetables to sear properly.
  2. Cook the Vegetables: Add the vegetable oil to the griddle or skillet. Once shimmering, add zucchini sticks, broccoli florets, sliced mushrooms, and onion pieces. Cook them until they begin to soften, stirring occasionally to cook evenly.
  3. Add Butter, Garlic, and Seasonings: Push the vegetables to one side of the griddle. Add butter and minced garlic to the empty space and allow the garlic to become fragrant. Season the vegetables with soy sauce, garlic powder, onion powder, and pepper. Mix everything together well and continue cooking for about 2 minutes until the vegetables are cooked through but still crisp.
  4. Serve: Remove the cooked Hibachi Vegetables from the heat and transfer to a serving plate. Serve immediately as a flavorful side dish.

Notes

  • For a vegan version, substitute salted butter with a plant-based butter or additional vegetable oil.
  • You can add other vegetables like bell peppers or snap peas for variety.
  • Adjust the seasoning to taste - add more soy sauce for saltiness or increase garlic for a more intense flavor.
  • Serve alongside hibachi chicken, steak, or tofu for a complete hibachi-style meal.
