Ingredients

Protein

  • 1.4 lbs boneless skinless chicken breasts (or 1 lb cooked rotisserie chicken)

Dressing and Mix-ins

  • 1/2 cup mayonnaise (store-bought or homemade)
  • 1 cup cottage cheese
  • 65 g grapes, quartered (about 24 grapes, any color)
  • 2 celery ribs, chopped
  • 1 tablespoon fresh lemon juice

Seasonings

  • 2 teaspoons chicken seasoning (or salt)
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • Ground black pepper, to taste
  • Salt, to taste

Instructions

  1. Cook the chicken: Season the chicken breasts with chicken seasoning or salt. Boil them in a covered pot on the stove for about 20 minutes until tender, or use an Instant Pot for faster cooking. Alternatively, use pre-cooked rotisserie chicken.
  2. Prepare the dressing: While the chicken cooks, combine the cottage cheese and mayonnaise in a blender, food processor, or with an immersion blender in a bowl. Blend until smooth and creamy.
  3. Shred the chicken: Once cooked, remove the chicken from the pot and place it in a large mixing bowl. Use two forks to shred the meat into bite-sized pieces.
  4. Combine ingredients: Add the blended cottage cheese and mayonnaise mixture along with the quartered grapes, chopped celery, fresh lemon juice, dried oregano, garlic powder, smoked paprika, onion powder, salt, and black pepper into the bowl with the shredded chicken.
  5. Mix thoroughly: Stir all ingredients well until the chicken is evenly coated with the dressing and spices.
  6. Season to taste: Adjust salt and pepper according to your preference.
  7. Chill and serve: Refrigerate the chicken salad for a couple of hours to allow flavors to meld, or serve immediately and enjoy.
