Ingredients

Vegetables

  • 2 zucchinis, cubed (about 4 cups)
  • 2 bell peppers, chopped into 1/2 inch cubes
  • 1/2 red onion, cut into chunks
  • 1 cup cherry tomatoes, halved

Other Ingredients

  • 1/2 tablespoon olive oil
  • Salt and pepper, to taste
  • 8 small tortillas (6-inch size)
  • 2 cups Slow Cooker Honey Garlic Beef (prepared beforehand)
  • 1/2 cup crumbled feta cheese
  • 1 lemon, cut into wedges
  • Yogurt or tzatziki, for serving

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the vegetables evenly.
