Ingredients

Chicken and Seasoning

  • 2 large chicken breasts (around 200g/7oz each), sliced in half to make 4 thin chicken breasts
  • 3 tbsp plain (all-purpose) flour
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika

Cooking Ingredients

  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced

Sauce Ingredients

  • 120 ml (1/2 cup) chicken stock
  • 4 tbsp fresh lemon juice (juice from approx. 1.5 lemons)
  • 3 tbsp honey
  • 1 lemon, sliced into half-moon slices
  • 1 tbsp freshly chopped parsley

Instructions

  1. Prepare the Chicken: Place the chicken breasts on a tray or board. In a bowl, mix together the flour, salt, black pepper, and paprika. Coat both sides of each chicken breast evenly with this flour mixture.
  2. Heat the Pan: Heat the olive oil and unsalted butter together in a large frying pan over medium-high heat until the butter has melted and the mixture is hot but not smoking.
  3. Cook the Chicken: Add the floured chicken breasts to the pan. Cook for 7-8 minutes total, turning once halfway through, until both sides are golden brown and chicken is mostly cooked through.
  4. Add Garlic and Sauce Ingredients: Add the minced garlic to the pan and stir for about 30 seconds, being careful not to burn it. Then add the chicken stock, fresh lemon juice, honey, and lemon slices into the pan.
  5. Simmer the Sauce: Bring the sauce to a boil, then reduce the heat and simmer gently for about 5 minutes, allowing the sauce to slightly reduce and thicken, and the chicken to finish cooking.
  6. Finish and Serve: Sprinkle the cooked chicken and sauce with freshly chopped parsley. Serve immediately over your choice of cooked rice, spaghetti, linguine, or orzo.
