Ingredients

Chicken Wings

  • 2 pounds chicken wings
  • 3 tablespoons potato starch
  • 1 tablespoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼ teaspoon paprika
  • oil spray, for coating

Honey Lemon Pepper Sauce

  • ½ cup honey
  • 1 lemon, zested
  • ¼ cup lemon juice (or more to taste)
  • 1 tablespoon minced garlic
  • 1 tablespoon butter
  • 1-2 teaspoons ground black pepper
  • 1 pinch salt

Instructions

  1. Preheat and Prepare Wings: Heat your oven to 450°F. Thoroughly pat the chicken wings dry with a paper towel to remove any moisture, which helps achieve crispiness during baking.
  2. Coat Wings: In a large bowl, add the potato starch, baking powder, garlic powder, onion powder, and paprika. Toss the wings in this mixture until they are evenly coated. This coating helps the wings crisp up beautifully in the oven.
  3. Arrange Wings on Pan: Lightly spray a parchment-lined sheet pan with oil. Place the coated wings in a single layer on the pan. Spray the tops of the wings lightly with oil to promote even browning.
  4. Bake Wings: Reduce the oven temperature to 425°F and bake the wings for 35 to 40 minutes, depending on the size. Flip the wings halfway through baking and spray the tops again with a little oil to ensure crispness on both sides.
  5. Prepare Sauce: While the wings bake, combine the honey, lemon juice, lemon zest, minced garlic, butter, salt, and ground black pepper in a small saucepan over medium heat. Stir occasionally and simmer for 3 to 5 minutes until the sauce is well combined and slightly thickened. Reserve a small portion of the sauce if you want to use it as a dipping sauce.
  6. Toss Wings in Sauce: Once the wings are cooked and crispy, transfer them to a large bowl. Pour the honey lemon pepper sauce over the wings and toss thoroughly to coat each wing evenly with the flavorful glaze.

Notes

  • Patting wings dry before coating is key to achieving a crispy texture.
  • Adjust the lemon juice quantity in the sauce to balance sweetness and tartness to your preference.
  • Baking powder helps crisp up the wings without frying.
  • You can keep the reserved sauce for dipping, enhancing the flavor experience.
  • If you prefer spicier wings, increase the amount of ground pepper or add a pinch of cayenne pepper to the sauce.
