For Pan Sauce (Skillet Method)

Instructions

  1. Preheat Oven and Prepare Steaks: Preheat the oven to 400°F and place an empty sheet pan or oven-safe skillet inside to heat up. Bring steaks out of the fridge so they come to room temperature.
  2. Season Steaks: In a small bowl, mix olive oil, minced garlic, dried thyme, dried rosemary, salt, and black pepper. Rub this seasoning mixture evenly over both sides of each steak.
  3. Cook on Sheet Pan (Option 1): Carefully remove the hot sheet pan from the oven and place the seasoned steaks on it. Return the pan to the oven and broil steaks for 6 to 10 minutes if thin cut, or 10 to 14 minutes if thick cut, aiming for internal temperatures between 120°F and 160°F depending on desired doneness.
  4. Rest and Serve: Remove steaks from the oven and let them rest for 5 minutes before slicing and serving.
  5. Cook on Skillet (Option 2): Place the hot oven-safe skillet over high heat on the stovetop. Sear the seasoned steaks for 1-2 minutes per side until nicely browned.
  6. Finish in Oven: Transfer the skillet with steaks to the preheated oven. Broil for 3 to 5 minutes for thin steaks or 5 to 8 minutes for thick steaks, depending on doneness preferences (120°F to 160°F).
  7. Rest Steaks: Remove the skillet from the oven and transfer steaks to a cutting board or plate. Tent loosely with foil and let rest.
  8. Make Pan Sauce: Return the skillet to medium heat, pour in beef broth, and scrape the bottom to loosen browned bits. Simmer the liquid until it reduces by half, about 5-7 minutes. Stir in butter and cook for another 2-3 minutes until slightly thickened.
  9. Slice and Serve: Slice the rested steaks and drizzle with the warm pan sauce before serving.
