Ingredients
Fruits and Spices
6 apples (3 Honey Crisp, 3 Granny Smith, sliced into rounds)
1/2 lemon (sliced into rounds)
1/2 orange (sliced into rounds)
2 cinnamon sticks
1 star anise (optional)
Liquids
6 cups water
1 tablespoon vanilla extract
1/2 cup maple syrup
Other Ingredients
1 1/3 cups pumpkin puree
1/2 tablespoon pumpkin spice
Instructions
Prepare Ingredients: Slice the apples, lemon, and orange into rounds to release their flavors more effectively during cooking.
Add Ingredients to Instant Pot: Place the sliced fruits, water, cinnamon sticks, star anise (if using), and vanilla extract into the Instant Pot or pressure cooker.
Pressure Cook: Seal the Instant Pot and cook on high pressure for 15 minutes to infuse the water with the flavors of the fruits and spices.
Release Pressure: Allow a natural pressure release for 10 minutes, then quickly release any remaining pressure before carefully removing the lid.
Cool and Strain: Let the cider cool completely. Then strain the mixture through a colander lined with cheesecloth, squeezing the fruit to extract as much juice as possible, discarding the solids afterward.
Mix Final Ingredients: Stir in the maple syrup, pumpkin puree, and pumpkin spice until fully combined and smooth.
Serve: Enjoy the cider warm or chilled. Optionally, top with whipped cream, a sprinkle of cinnamon, and a caramel drizzle for extra indulgence.
Notes
For a spicier cider, add more cinnamon sticks or pumpkin spice.
Use fresh pumpkin puree for the best flavor; canned is also acceptable.
Chill cider overnight for a refreshing cold drink.
Can be stored in the refrigerator up to 4 days.
Make sure to fully cool before straining to prevent burns.
