Delicious and tender Italian Beef Sandwiches slow-cooked to perfection with bell peppers, au jus gravy, and Italian seasoning, served on hoagie rolls with provolone cheese and pepperoncinis for an authentic flavorful experience.

Ingredients

Broth and Seasoning

  • 2 cups low sodium beef broth
  • 1 packet au jus gravy mix
  • 1 (0.7 oz) packet Italian salad dressing mix

Meat and Vegetables

  • 2.5 lbs top round roast
  • 3 bell peppers, cut into strips

Sandwich Assembly

  • 8 hoagie rolls
  • 8 slices provolone cheese
  • 16 jar sliced pepperoncini

Instructions

  1. Prepare Broth Mixture: In your crock-pot, mix the 2 cups of low sodium beef broth with the packet of au jus gravy mix until fully combined.
  2. Add Roast and Peppers: Place the 2.5 lb top round roast into the crock-pot, then add the sliced bell peppers on top. Sprinkle the contents evenly with the Italian salad dressing mix.
  3. Cook the Beef: Cover the crock-pot with the lid and cook on high heat for 4 to 5 hours or on low heat for 8 to 10 hours, until the beef is tender and easily shreddable.
  4. Shred the Beef: Remove the roast from the crock-pot and shred it thoroughly using two forks. Return the shredded beef to the crock-pot, mixing it with the juices and peppers to keep it moist and flavorful.
  5. Assemble Sandwiches: Lay one slice of provolone cheese on the bottom half of each hoagie roll. Top it with a generous portion of the shredded beef and peppers, then add two sliced pepperoncinis on top. For extra juiciness, optionally spoon some cooking liquid onto the top half of the roll or serve the broth separately for dipping.
