Ingredients

Cookie Dough

  • 2 1/2 Cups icing sugar (add more if needed)

  • 1/3 Cup raspberry jam

Instructions

  1. Mix Dry Ingredients: In a medium mixing bowl, combine the all-purpose flour, baking powder, and salt. Stir these dry ingredients together and set aside for later use.
  2. Cream Butter and Sugar: Using an electric mixer, cream the unsalted butter and granulated sugar together until light and fluffy. This process helps incorporate air for a tender texture.
  3. Add Wet Ingredients: Beat in the eggs one at a time, followed by the orange juice, orange zest, and vanilla extract. Mix well to combine all the flavors evenly.
  4. Incorporate Dry Ingredients: Gradually add the flour mixture to the wet ingredients and mix until the dough comes together and is well combined, being careful not to overmix.
  5. Chill Dough: Divide the dough into two equal portions. Wrap each ball tightly in plastic wrap and refrigerate for at least one hour to allow the dough to firm up and develop flavor.
