A light and flavorful Japanese Clear Soup made by simmering a combination of fresh vegetables and aromatics in chicken broth. This comforting soup is gently seared, simmered for an hour to develop depth, then strained and served hot topped with fresh scallions and mushrooms.

Ingredients

Soup Base

  • 2 teaspoons oil
  • 6 cups chicken broth

Vegetables & Aromatics

  • 1 large sweet onion, peeled and cut into wedges
  • 2 large carrots, cut into chunks
  • 2 inch piece fresh ginger, sliced
  • 6 cloves garlic, peeled and sliced
  • 4 whole scallions, sliced
  • 10 button mushrooms, sliced thinly
  • Salt to taste

Instructions

  1. Heat the oil: Warm a large pot over medium-high heat and add 2 teaspoons of oil to coat the bottom evenly.
  2. Sear the vegetables: Add the onion wedges, carrot chunks, and sliced ginger to the pot. Sear the vegetables on all sides until they start to caramelize, which develops a rich flavor base for the soup.
  3. Cook the garlic: Add the sliced garlic to the pot and cook just until it begins to brown, releasing its aroma without burning.
  4. Add broth and simmer: Pour in 6 cups of chicken broth and bring the mixture to a boil. Reduce heat to low, cover the pot, and let it simmer gently for one hour to infuse the broth with the flavors of the vegetables and aromatics.
  5. Strain the broth: After simmering, pour the broth through a fine-mesh sieve to remove all solids. Reserve the strained vegetables for another use if desired. Taste the broth and season with salt as needed.
  6. Serve the soup: Divide the hot, clear broth evenly into four bowls. Top each bowl with fresh sliced scallions and thinly sliced button mushrooms for added texture and freshness.
