This Keto Chicken Alfredo Casserole is a creamy, low-carb comfort food perfect for those following a ketogenic diet. It combines tender chicken, nutritious broccoli, and a rich Parmesan Alfredo sauce baked to golden perfection, making a satisfying and delicious meal ready in just 40 minutes.

Ingredients

Chicken

  • 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper, to taste

Broccoli

  • 2 cups broccoli florets, cut into bite-sized pieces

Alfredo Sauce

  • 1 cup heavy cream, room temperature
  • 1 cup freshly grated Parmesan cheese
  • 1 tsp garlic powder (or substitute fresh minced garlic)
  • Salt and pepper, to taste

Other

  • Butter or high-heat oil, for greasing the baking dish

Instructions

  1. Preheat and prepare dish: Preheat your oven to 375°F (190°C) and grease a 9x13-inch casserole dish with butter or high-heat oil to prevent sticking.
  2. Cook chicken: Season the bite-sized chicken pieces with salt and pepper. Heat a skillet over medium-high heat and cook the chicken until no longer pink in the center, about 5 to 7 minutes. Remove from the skillet and set aside.
  3. Blanch broccoli: Bring a pot of water to a boil and blanch the broccoli florets for 2 minutes to soften slightly. Drain and rinse under cold water immediately to stop the cooking process, preserving their bright green color.
  4. Make Alfredo sauce: In the same skillet used for the chicken, reduce heat to medium-low and bring the heavy cream to a simmer. Gradually whisk in the freshly grated Parmesan cheese until fully melted and smooth. Add garlic powder, salt, and pepper to taste. Continue stirring until the sauce thickens slightly, approximately 3 to 5 minutes.
  5. Assemble casserole: Layer the cooked chicken and blanched broccoli evenly in the prepared casserole dish. Pour the Alfredo sauce evenly over the top, ensuring all ingredients are well coated.
  6. Bake: Place the casserole in the preheated oven and bake for 15 to 20 minutes, or until the sauce is bubbling and the top is golden. For a more browned and crispy top, broil the casserole for an additional 2 minutes if desired.
  7. Rest and serve: Allow the casserole to rest for 5 minutes after baking to let it set before serving. This helps the flavors meld and makes it easier to portion.

Notes

  • You can substitute garlic powder with fresh minced garlic if preferred; add it earlier while simmering the cream to infuse more flavor.
  • Use freshly grated Parmesan for the best flavor and melting properties.
  • To add more texture, consider sprinkling some mozzarella or breadcrumbs on top before baking.
  • This casserole is great for meal prep and reheats well in the oven or microwave.
  • For a dairy-free version, substitute heavy cream and cheese with suitable keto-friendly alternatives.
