King Ranch Chicken Casserole is a comforting and flavorful Tex-Mex layered dish featuring shredded chicken, creamy soup-based sauce, diced tomatoes, green chilies, and a blend of spices, all layered between tortillas and baked to bubbly perfection with melted cheddar cheese on top. Ingredients

Base and Vegetables

  • 1 tablespoon olive oil
  • 1 medium onion, diced

Sauce

  • 10.75 ounce condensed cream of mushroom soup (1 can)
  • 10.75 ounce condensed cream of chicken soup (1 can)
  • 14.5 ounce diced tomatoes (1 can)
  • 2/3 cup chicken broth (low sodium)
  • 4 ounce green chilies (1 can)
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder

  • 3 cups cooked shredded chicken
  • 3 cups shredded cheddar cheese
  • 10 medium tortillas (corn or flour; 4 of them cut into halves)

Garnish

  • 1 tablespoon chopped chives (green onion)

Instructions

  1. Prep the oven: Preheat your oven to 375°F (190°C) to get it ready for baking the casserole.
  2. Cook onion and pepper: In a skillet over medium-high heat, warm the olive oil. Add diced onion and red bell pepper, cooking for 3-4 minutes until the onion softens and turns translucent, releasing its flavor.
  3. Make the sauce: Transfer the cooked onion and pepper mixture to a large mixing bowl. Add the condensed cream of mushroom soup, cream of chicken soup, diced tomatoes, chicken broth, green chilies, chili powder, and garlic powder. Stir thoroughly until all ingredients are well combined into a smooth sauce.
  4. Start to assemble casserole: In a 9x13-inch casserole dish, spread 1/2 cup of the prepared sauce evenly over the bottom. Layer half of the shredded chicken on top, then pour 2 cups of the sauce over the chicken. Sprinkle 1 cup of shredded cheddar cheese evenly. Finish this layer by spreading half of the tortillas over the cheese.
  5. Finish assembling casserole: Repeat layering with the remaining chicken, 2 more cups of sauce, 1 cup of cheese, and the remaining tortillas. Top the entire casserole with the remaining sauce and finish off with the last cup of cheese to create a cheesy crust.
  6. Bake and garnish: Place the casserole in the preheated oven and bake for 30-35 minutes, or until the casserole is bubbly and the cheese has browned slightly on top. Remove from oven, garnish with chopped chives (green onion), and serve warm.
