This refreshing Lavender Lemonade combines the bright, zesty flavor of freshly squeezed lemons with the fragrant, floral notes of dried culinary lavender. Sweetened with both granulated sugar and honey, this beverage offers a delicate balance of sweetness and herbal aroma, perfect for cooling down on warm days or adding a touch of elegance to brunch gatherings. Optional food coloring enhances its charming pastel hue, making it as visually appealing as it is delicious.

Ingredients

For the Lavender Syrup

  • 2 cups water (454 grams)
  • ½ cup granulated sugar (100 grams)
  • ¼ cup honey (88 grams)
  • 3 tablespoons dried culinary lavender (8 grams, plus more for garnish)

For the Lemonade

  • 4 cups water (908 grams)
  • 2 cups freshly squeezed lemon juice (454 grams, from 10-12 lemons)
  • Blue or purple food coloring (optional, to enhance color)
  • Lemon slices (optional, for garnish)

Instructions

  1. Boil: In a medium saucepan over medium heat, combine 2 cups of water and the granulated sugar. Bring the mixture to a boil, stirring until the sugar is fully dissolved. Once dissolved, remove the pan from heat and stir in the honey and dried culinary lavender to infuse the syrup with floral flavor.
  2. Steep: Let the lavender syrup steep for 2 hours at room temperature, allowing the lavender's aroma and taste to fully infuse. If you prefer a milder lavender flavor, reduce the steeping time accordingly.
  3. Strain: After steeping, strain the syrup through a fine mesh sieve, pressing down on the lavender buds to extract all the flavorful liquid into a clean container.
  4. Combine: In a large pitcher, mix the freshly squeezed lemon juice, the strained lavender syrup, and the remaining 4 cups of water. Stir well to combine the flavors evenly.
  5. Color (Optional): To enhance the visual appeal, add a few drops of blue or purple food coloring to the lemonade. This step is optional but adds a charming pastel tone perfect for brunch or special occasions.
  6. Serve: Pour the lavender lemonade over ice cubes and garnish with lemon slices and additional dried lavender if desired. Serve chilled and enjoy the refreshing blend of citrus and floral notes.

Notes

  • You can adjust the lavender steeping time to make the flavor more subtle or intense according to your preference.
  • Freshly squeezed lemon juice is recommended for the best flavor; bottled juice may alter the taste.
  • Honey adds depth to the sweetness, but you can use all granulated sugar if preferred.
  • Use culinary-grade dried lavender to ensure safety and optimal flavor.
  • The lemonade can be stored in the refrigerator for up to 3 days in a covered container.
  • If you want to make it sparkling, substitute some of the water with sparkling water just before serving.
