Ingredients

Salmon

  • 1 piece salmon slab (200 grams)
  • Oil for frying salmon
  • Kosher salt, to taste
  • Ground black pepper, to taste

Lemon Butter Sauce

  • 2 to 3 tablespoons lemon juice (from one lemon)
  • 2 tablespoons minced garlic
  • 5 to 6 tablespoons unsalted butter
  • 1 teaspoon chopped fresh dill (reserve some for garnish)

Toppings

  • 1 to 2 tablespoons freshly grated Parmesan cheese (optional)
  • Lemon zest (from one lemon)
  • Additional fresh dill for garnish

Instructions

  1. Prepare Salmon: Pat dry all sides of the salmon fillet thoroughly to ensure a good sear.
  2. Pan Sear First Side: Heat oil in a pan over medium heat. Place the salmon skin side up and season with kosher salt and ground black pepper. Let it cook undisturbed for about 3 to 4 minutes until the bottom turns golden brown.
  3. Cook Skin Side: Gently flip the salmon to cook the skin side. Season again with kosher salt and pepper. Spoon hot oil over the salmon to crisp the skin. Cook for another 3 to 4 minutes until the skin is crispy and the salmon is cooked through but still flaky. Avoid overcooking.
  4. Rest Salmon: Transfer the cooked salmon onto a paper-lined plate and set aside.
  5. Simmer Lemon Juice and Garlic: In another skillet, pour lemon juice and add minced garlic. Simmer gently until the lemon juice reduces by half, concentrating the flavors.
  6. Make Lemon Butter Sauce: Add unsalted butter to the lemon garlic mixture and stir occasionally to melt and combine. Turn off heat and stir in chopped fresh dill.
