This vibrant Lemon Chicken Ramen features tender chicken breasts cooked to golden perfection in a zesty, creamy lemon-infused broth. Ingredients

Chicken

  • 2 chicken breasts
  • 50g all purpose flour (seasoned with salt and pepper)
  • 2 tbsp olive oil

Broth

  • 3 garlic cloves (minced)
  • 1 tsp paprika
  • 1 tsp oregano
  • 1 tsp chilli flakes
  • 600ml chicken stock
  • 1/2 lemon (juiced)
  • 300 ml single or light cream

Other

  • 150g fresh ramen noodles
  • 5g parsley (finely chopped)
  • Lemon wedges (for garnish)
  • Mangetouts (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Coat and cook chicken: Season the flour with salt and pepper, then coat the chicken breasts evenly. Heat olive oil in a saucepan over medium heat and sauté the chicken breasts for 3 minutes on each side until golden brown. Remove the chicken and set aside.
  2. Prepare broth base: In the same saucepan, add minced garlic, paprika, oregano, and chilli flakes. Stir the spices and garlic well to release their aromas.
  3. Add liquids and simmer: Pour in the chicken stock, squeeze in lemon juice, and add the single or light cream. Stir to combine all ingredients thoroughly.
  4. Simmer chicken in broth: Return the chicken breasts to the saucepan and cover with a lid. Let them cook in the broth for 5 to 10 minutes to absorb the flavors and cook through. Remove chicken and set aside again.
  5. Cook noodles: Add the fresh ramen noodles to the simmering broth and cook for 2 to 3 minutes or according to package instructions, until tender.
  6. Slice chicken: While the noodles cook, thinly slice the cooked chicken breasts to prepare for serving.
  7. Assemble and serve: Divide the noodles and broth evenly between two bowls. Top each bowl with sliced chicken, chopped parsley, lemon wedges, mangetouts, and a sprinkle of sesame seeds for freshness and texture. Serve immediately and enjoy!

  • For extra heat, increase the amount of chilli flakes according to taste.
  • Using fresh ramen noodles is recommended for the best texture; dried noodles may require longer cooking time.
