These Lemon Pistachio Truffles are a delightful blend of creamy white chocolate ganache infused with fresh lemon juice and zest, combined with ground pistachios for a nutty crunch. Ingredients

For the Lemon Pistachio Filling

  • 200g good-quality white chocolate, finely chopped
  • 100ml heavy cream
  • 2 tbsp unsalted butter
  • 1/3 cup shelled pistachios, very finely ground
  • 2 tbsp fresh lemon juice
  • 1 tbsp finely grated lemon zest
  • Pinch of salt

For the Cookie Crust Base

  • 1/2 cup crushed shortbread cookies or vanilla wafers
  • 2 tbsp melted butter

For the Coating

  • 300g white chocolate, melted
  • 1 tbsp pistachio paste or finely ground pistachios
  • 1 tbsp lemon juice
  • Optional: yellow gel coloring (a tiny dot for a deeper hue)

For Garnish

  • 2 tbsp finely chopped pistachios
  • A pinch of lemon zest (optional)

Instructions

  1. Make the Ganache Filling: In a small saucepan, gently heat the heavy cream and butter over medium until just beginning to simmer. Remove from heat and pour over the finely chopped white chocolate in a heatproof bowl. Let it sit for one minute to soften, then stir until smooth and fully melted. Mix in ground pistachios, fresh lemon juice, lemon zest, and a pinch of salt. Allow the mixture to cool slightly, then cover and refrigerate for 1.5 to 2 hours until thickened enough to scoop.
  2. Prepare the Cookie Base: In a small bowl, combine the crushed shortbread cookies with the melted butter. Mix thoroughly until the texture resembles damp sand. Roll about 1/2 teaspoon of this mixture into small discs using your hands. Place the discs on a parchment-lined tray and chill briefly if necessary to help maintain their shape.
  3. Shape the Truffles: Using a tablespoon, scoop the chilled ganache and roll into smooth balls with your hands. Gently press one cookie disc onto the bottom of each ganache ball to create a base. Blend the edges carefully so the cookie adheres smoothly to the ganache. Place the formed truffles back onto the tray and refrigerate for 20 to 30 minutes until firm.
  4. Make the Coating: Melt the white chocolate gently in a heatproof bowl, using a microwave or double boiler, stirring frequently. Once melted, stir in pistachio paste and lemon juice until fully combined. If desired, add a tiny dot of yellow gel coloring to intensify the lemon color. Allow the mixture to cool slightly until it thickens to a consistency suitable for dipping.
  5. Coat the Truffles: Place a wire rack over a parchment-lined tray. Dip each chilled truffle into the coating using a fork or skewer, letting excess drip off. Transfer each coated truffle onto the wire rack and immediately sprinkle with finely chopped pistachios and a small pinch of lemon zest if using. Leave the truffles to set at room temperature until the coating is firm.
