This Low Carb Philly Cheesesteak Casserole is a hearty and cheesy dinner option that combines savory ground beef, sautéed onions and bell peppers, and a blend of cream cheese, provolone, and mozzarella. It captures the classic flavors of a Philly cheesesteak while keeping carbs low, making it perfect for those following a low-carb lifestyle.

Ingredients

Meat and Vegetables

  • 2 lbs ground beef (80/20 fat ratio preferred)
  • 1 large onion, diced
  • 2 large bell peppers (green, red, or mixed), diced
  • 2 cloves garlic, minced

Dairy and Cheese

  • 8 oz cream cheese, softened to room temperature
  • 8 oz provolone cheese, sliced
  • 1.5 cups mozzarella cheese, shredded

Other Ingredients

  • 2 tbsp Worcestershire sauce
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Spray a 9×13 baking dish with non-stick cooking spray to prevent sticking and set aside.
  2. Sauté Vegetables: Heat olive oil in a large skillet over medium heat. Add diced onions and bell peppers, cooking for 5-6 minutes until they begin to soften and become fragrant. Add minced garlic and cook for an additional 30 seconds, stirring constantly to avoid burning.
  3. Cook Ground Beef: Add the ground beef to the skillet, breaking it up with a spatula. Season generously with salt and pepper. Cook for 7-8 minutes until the beef is completely browned and there is no pink remaining. Drain any excess fat if necessary.
  4. Add Flavor and Cream Cheese: Stir in Worcestershire sauce to coat the meat mixture. Lower the heat to low and add the softened cream cheese, stirring continuously until it is fully melted and the mixture is creamy and well combined.
  5. Assemble the Casserole: Transfer the beef and vegetable mixture evenly into the prepared baking dish. Tear the provolone cheese into pieces and layer it over the beef mix, then sprinkle the shredded mozzarella on top for a perfect cheesy finish.
  6. Bake: Place the casserole in the oven and bake for 22-25 minutes, or until the cheese is melted, bubbly, and lightly golden on top.
  7. Rest and Serve: Remove the casserole from the oven and let it rest for 5 minutes before serving. This resting time allows the flavors to meld and the casserole to firm up slightly.

Notes

  • Use high-fat content ground beef (80/20) for juicier results.
  • Drain excess oils after cooking the beef to ensure the casserole has a firm consistency.
  • You can substitute the provolone and mozzarella with cheddar cheese for a different flavor profile.
