A quick and delicious Mac and Cheese Quesadilla combining creamy macaroni and cheese with melted cheese inside a crispy flour tortilla, perfect for a comforting snack or light meal.

Ingredients

Ingredients

  • 1 tablespoon unsalted butter
  • 1 (8-inch) flour tortilla
  • ½ cup prepared macaroni and cheese
  • Sliced cheese (such as cheddar or American), amount to preference

Instructions

  1. Heat the skillet: Melt the butter in a skillet over medium heat until bubbly and fragrant, preparing it for cooking the quesadilla.
  2. Fill the tortilla: Place the tortilla in the skillet and spread the prepared macaroni and cheese over one half evenly. Add sliced cheese on top of the mac and cheese for extra meltiness and flavor.
  3. Fold and heat: Fold the empty side of the tortilla over the macaroni and cheese filling, cover the skillet with a lid, and cook for about 2 minutes to warm the filling and help the cheese melt inside thoroughly.
  4. Flip and finish: Remove the lid, carefully flip the quesadilla once the bottom is golden brown and crispy, and cook the other side until also golden and crisp, about 1-2 minutes more.
  5. Serve: Slide the quesadilla onto a plate, cut if desired, and serve warm for a gooey, comforting treat.

Notes

  • Use your favorite type of sliced cheese to customize the flavor.
  • Ensure the skillet is not too hot to avoid burning the tortilla while melting the cheese.
  • Covering the skillet helps melt the cheese evenly and warms the filling thoroughly.
  • Leftover quesadilla can be reheated in a skillet or microwave, but best enjoyed fresh.
