  • ¾ tsp black pepper (divided)
  • 1 ¼ tsp salt (divided)
  • ¼ cup maple syrup
  • 1 tbsp Dijon mustard
  • Juice from ½ fresh lemon

Vegetables

  • 1 lb petite gold potatoes (halved)
  • ½ lb green beans (trimmed)
  • 10 oz cherry tomatoes (halved)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (204°C) and line a 9x13-inch baking sheet with parchment paper for easy cleanup and to prevent sticking.
  2. Prepare and Roast Potatoes: Place the halved petite gold potatoes on the sheet pan. Drizzle with part of the olive oil, then sprinkle with salt, pepper, paprika, garlic powder, and onion powder. Toss until the potatoes are well coated. Roast them for about 20 minutes until they soften and develop a light golden color.
  3. Season the Salmon: While potatoes are roasting, season the salmon fillets on all sides with the remaining salt, pepper, paprika, garlic powder, and onion powder. Set aside to let the flavors meld.
  4. Make the Maple Glaze: In a small bowl, whisk together the maple syrup, Dijon mustard, fresh lemon juice, optional red pepper flakes, and the remaining salt to create a sweet and tangy glaze.
  5. Add Vegetables to the Sheet Pan: Remove the sheet pan from the oven. Push the roasted potatoes to one side (about a third of the sheet pan). Add the trimmed green beans and halved cherry tomatoes to the middle section of the pan.
