Ingredients

Meatloaf and Bread

  • 4 slices leftover meatloaf
  • 4 slices sourdough bread

Cheese

  • 2 slices cheddar cheese

Toppings

  • Red apple, thinly sliced
  • Pickles, sliced

  • Tabasco sauce or similar hot sauce, to taste
  • Nonstick cooking spray, for greasing the pan

Instructions

  1. Sear the Meatloaf Slices: Lightly spray a grill pan with nonstick cooking spray and heat it over medium heat. Add the meatloaf slices to the pan and sear them for 2 to 3 minutes until distinct grill marks form and the slices are warmed through.
  2. Flip the Meatloaf: Flip the meatloaf slices carefully and sear the other side until it is golden and heated evenly. Once done, remove the slices from the pan and set them aside.
  3. Toast the Sourdough: In the same pan, place the sourdough bread slices and grill them until they become lightly golden and crisp on each side, enhancing their flavor and texture.
  4. Melt the Cheese: Place a slice of cheddar cheese on top of two sourdough slices in the pan. Allow the cheese to melt slightly for about 20 seconds, so that it becomes soft and gooey.
  5. Assemble the Sandwich: On the cheesy side of one slice of sourdough bread, layer the seared meatloaf slices. Drizzle some Tabasco sauce or your preferred hot sauce evenly over the meatloaf. Add a layer of pickle slices and then a layer of thinly sliced red apples for a refreshing crunch.
  6. Finish and Serve: Top the layered slice with the remaining cheesy sourdough slice to complete the sandwich. Serve it immediately while warm and enjoy the perfect harmony of flavors and textures.
