Ingredients

Protein

  • 1.5 lbs Chicken breasts, boneless & skinless (cut into bite-sized pieces)

Vegetables & Fruits

  • 2 medium Zucchini (sliced into half-moons)
  • 2 Red bell peppers (diced into chunks)
  • 1 large Red onion (sliced into strips)
  • 2 cups Cherry tomatoes (halved)
  • 4 cloves Garlic (minced)
  • 1 Lemon (juice only)

Oils & Fats

  • 3 tbsp Extra virgin olive oil (divided for cooking)
  • 0.5 cup Feta cheese (crumbled)

Pantry & Herbs

  • 1 cup Kalamata olives (pitted and halved)
  • 1/4 cup Sun-dried tomatoes (chopped)
  • 2 tsp Dried oregano
  • 1 tsp Dried basil
  • 1/2 tsp Dried thyme
  • Salt & black pepper (to taste)

Garnish

  • 2 tbsp Fresh parsley (optional)

Instructions

  1. Prep: Begin by prepping all your ingredients. Chop the chicken breasts into bite-sized pieces, slice the zucchini into half-moons, dice the red bell peppers, slice the red onion into strips, halve the cherry tomatoes, pit and halve the Kalamata olives, mince the garlic, chop the sun-dried tomatoes, and juice the lemon. This preparation will ensure smooth cooking.
  2. Sear Chicken: Heat 2 tablespoons of extra virgin olive oil in a large skillet over medium-high heat. Add the chicken pieces, seasoning with salt and black pepper, and cook them until they are golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Sauté Vegetables: In the same skillet, add the remaining 1 tablespoon of olive oil. Sauté the sliced red onion and minced garlic until fragrant and translucent, about 2-3 minutes. Add the zucchini, red bell peppers, and sun-dried tomatoes. Cook, stirring occasionally, until the vegetables are tender but still crisp, roughly 5-7 minutes.
  4. Combine Ingredients: Return the cooked chicken to the skillet with the vegetables. Add the halved cherry tomatoes, Kalamata olives, dried oregano, dried basil, and dried thyme. Stir everything together thoroughly, allowing the flavors to meld for about 2 minutes over medium heat.
  5. Finish and Serve: Remove the skillet from heat, then squeeze fresh lemon juice over the stir fry. Sprinkle crumbled feta cheese on top and garnish with fresh parsley if desired. Serve hot as a wholesome, flavorful meal.
