Ingredients

Eggs

  • 12 Large eggs (Hard-boiled and peeled)

Filling

  • 1 Ripe avocado (Mashed)
  • 3 tbsp Mayonnaise
  • 2 tbsp Mexican crema (Or substitute with sour cream or Greek yogurt)
  • 1 Jalapeño pepper (Finely diced, remove seeds for less heat)
  • 2 tbsp Lime juice (Freshly squeezed)
  • 2 tbsp Fresh cilantro (Chopped)
  • 1 tsp Ground cumin
  • 0.5 tsp Chili powder
  • 0.5 tsp Garlic powder
  • Salt and pepper (To taste)

Garnish

  • Smoked paprika (For garnish)
  • Cilantro leaves (For garnish)
  • Jalapeño slices (For garnish)
  • Lime wedges (For garnish)

Instructions

  1. Boil Eggs: Place the eggs in a pot and cover with cold water. Bring to a boil over medium-high heat. Once boiling, remove from heat and let sit covered for about 10-12 minutes.
  2. Cool Eggs: Transfer the eggs to an ice bath to cool completely. This helps to stop the cooking process and makes peeling easier.
  3. Prep Eggs: Peel the cooled eggs carefully and slice each in half lengthwise.
  4. Mash Filling: Remove the yolks from the whites and place them in a bowl. Add the ripe avocado and mash together until smooth and creamy.
  5. Mix Filling: Add the mayonnaise, Mexican crema, finely diced jalapeño, lime juice, chopped cilantro, ground cumin, chili powder, garlic powder, salt, and pepper to the mashed mixture. Mix thoroughly until well combined and creamy.
  6. Season: Taste the filling and adjust seasoning with additional salt, pepper, or lime juice as desired.
  7. Fill Eggs: Using a spoon or a piping bag, carefully fill each egg white half with the avocado yolk mixture, creating a generous mound.
  8. Garnish: Sprinkle the filled eggs with smoked paprika, top with fresh cilantro leaves and jalapeño slices for extra color and flavor.
  9. Chill: Refrigerate the deviled eggs for at least 15-20 minutes before serving to allow the flavors to meld and to serve chilled.

Notes

  • To reduce heat, remove seeds from the jalapeño before dicing.
  • Mexican crema can be substituted with sour cream or Greek yogurt for a similar tangy flavor.
  • Use a piping bag with a star tip for a decorative filling presentation.
