This Mexican Pizza recipe is a delicious Taco Bell copycat featuring layers of seasoned ground beef, refried beans, and cheese sandwiched between crispy tortillas. Easily made using an air fryer, oven, or stovetop, it’s topped with fresh tomatoes, onions, olives, sour cream, and green onions for a perfect combination of flavors and textures in just 15 minutes.

  • 1 lb ground beef
  • 2 tbsp taco seasoning
  • 1/4 cup water
  • 4 tbsp enchilada sauce

  • 1 tomato (roma or beefsteak, seeds removed and diced)
  • 1 small red onion (diced)
  • 1/4 cup black olives (sliced)
  • 1/4 cup sour cream
  • 2 green onions (finely diced)

Instructions

  1. Cook Ground Beef: In a large frying pan or skillet over medium heat, add the ground beef. Use a spatula or spoon to break up the meat into small pieces as it cooks. Sauté for about 5-8 minutes or until fully cooked. Remove excess grease from the pan.
  2. Simmer with Seasoning: Add taco seasoning, water, and enchilada sauce to the cooked beef. Stir until evenly combined, then let it simmer for 1-2 minutes to enhance flavors.
  3. Assemble Pizzas: Spread a layer of refried beans on one tortilla, then top with the seasoned ground beef. Add a layer of cheese over the beef and place another tortilla on top to form a sandwich.
  4. Add Sauce and Cheese: Spread 1 tablespoon of enchilada sauce evenly over the top tortilla, then cover it with shredded cheese to ensure a melty top layer.
  5. Repeat Assembly: Continue assembling the remaining pizzas following the same process with the remaining tortillas and toppings.
  6. Cook Pizzas (Choose One Method): Air Fryer: Preheat to 400°F. Place one pizza at a time in the air fryer basket and cook for about 5 minutes or until cheese melts and tortillas are crispy. Oven: Preheat oven to 350°F. Place pizzas on a lined baking sheet, leaving space between them. Bake for 8-10 minutes until cheese melts and tortillas crisp. Pan Frying: Heat a splash of oil in a large frying pan over medium heat. Add one pizza at a time and cover with a lid. Cook 4-5 minutes or until cheese melts and bottom tortilla crisps.
  7. Garnish and Serve: Transfer cooked pizzas to a serving plate. Top with diced tomatoes, red onion, black olives, sour cream, and green onions. Serve immediately and enjoy!
