  • 1/4 cup fig jam
  • 2 tbsp pecans (diced)
  • 2 tsp fresh thyme

Instructions

  1. Preheat Oven: Preheat your oven to 375˚F to prepare for baking the pumpkin and brie.
  2. Prepare Pumpkin Bowl: Slice the pumpkin horizontally so you create a hollow 'bowl' that fits your brie wheel snugly. Remove seeds and fibers from the interior, and trim the sides if necessary to make the brie fit comfortably.
  3. Oil the Pumpkin: Brush the inside of the hollowed pumpkin with avocado or olive oil to prevent sticking and enhance flavor. Place the pumpkin shell on a baking sheet and cover with the pumpkin lid.
  4. Initial Bake: Bake the pumpkin shell in the oven for 10 minutes to soften the flesh slightly.
  5. Prepare Brie: While the pumpkin bakes, score the top of the brie wheel by making shallow cuts to allow for even melting.
  6. Assemble and Add Toppings: Remove the pumpkin from the oven, place the brie wheel inside the pumpkin shell, then drizzle honey and fig jam evenly over the brie.
  7. Final Bake: Return the assembled pumpkin and brie to the oven and bake for an additional 30 minutes with the pumpkin lid placed beside it, ensuring the cheese melts fully and flavors meld.
  8. Garnish and Serve: Once baked, remove from oven and sprinkle fresh thyme and diced pecans on top. Serve immediately paired with bread, crackers, or apples for dipping and enjoying.
