A flavorful and creamy Mozzarella Chicken Skillet recipe featuring tender chicken breasts cooked in a garlicky tomato cream sauce, topped with melted buffalo mozzarella cheese and fresh basil. Ready in just 30 minutes, this one-pan dish is perfect for a comforting weeknight dinner.

Ingredients

Chicken

  • 2 lbs Boneless skinless chicken breasts (cut or pounded to thin cutlets)
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp olive oil

Sauce

  • 4 cloves garlic (pressed)
  • 28 oz crushed tomatoes (1 can)
  • 1 tbsp Italian seasoning (dried)
  • 1/2 tsp salt
  • 1/2 cup heavy cream
  • 1/4 cup parmesan cheese
  • 1/3 cup fresh basil (chopped)

Topping

  • 4 oz buffalo mozzarella (sliced)

Instructions

  1. Season the chicken: Mix the garlic powder, salt, and pepper together and evenly season both sides of each chicken breast cutlet.
  2. Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Once hot, place the chicken breasts in a single layer. Cook in batches if necessary to avoid overcrowding.
  3. Brown the chicken: Cook each side of the chicken for 3-4 minutes until browned, then remove from the skillet and set aside.
  4. Prepare the sauce base: Add pressed garlic to the skillet and stir for 30 seconds to release its aroma. Pour in crushed tomatoes and add Italian seasoning, reducing heat to medium. Simmer for 5 minutes, stirring and scraping the pan to lift browned bits.
  5. Finish the sauce: Stir in parmesan cheese and heavy cream, then add chopped fresh basil. Return the chicken to the skillet, cover with the sauce, and let simmer for 3-5 minutes until heated through.
  6. Melt the mozzarella: Top each chicken breast with a slice of buffalo mozzarella. Place the skillet under the oven broiler for 3-5 minutes until the cheese is melted, bubbly, and lightly browned.
  7. Garnish and serve: Sprinkle extra fresh basil on top and serve the dish hot, ideally over pasta or alongside roasted vegetables.

  • Use thinly pounded chicken cutlets for even and quick cooking.
  • If you don’t have buffalo mozzarella, fresh mozzarella is a perfect substitute.

  • For a lighter version, substitute heavy cream with half-and-half, but the sauce will be less rich.
