Ingredients

Wet Ingredients

  • 6 tablespoons unsalted butter
  • 6 tablespoons brown sugar, packed
  • 2/3 cup honey

Dry Ingredients

  • 3 cups rolled oats
  • 1 1/2 cups Rice Krispies cereal
  • 1/2 cup graham crackers, crushed into pieces and crumbs
  • 1/2 teaspoon salt

Add-ins

  • 1/2 cup mini chocolate chips
  • 1/2 cup cereal marshmallows

Instructions

  1. Prepare the Pan: Spray an 8x8 inch pan with vegetable oil or baking spray and line just the bottom with parchment paper to prevent sticking.
  2. Make the Syrup: In a small pot over medium heat, add the butter, brown sugar, and honey. Whisk continuously until the mixture bubbles, then continue cooking and whisking for exactly 2 minutes to dissolve the sugar and thicken the syrup.
  3. Combine Dry Ingredients: In a large mixing bowl, add the rolled oats, Rice Krispies cereal, crushed graham crackers, and salt. Stir to combine.
  4. Mix Wet and Dry Ingredients: Pour the hot butter and sugar mixture over the dry ingredients. Whisk gently but thoroughly to combine everything evenly. Allow the mixture to cool for 20 minutes so it thickens slightly.
  5. Add Marshmallows and Chocolate Chips: Gently fold in the mini chocolate chips and cereal marshmallows to avoid melting or breaking them up.
  6. Press into Pan and Chill: Transfer the mixture into the prepared pan and press it down gently but firmly to pack the bars. Place the pan in the refrigerator and let it solidify for at least 2 hours.
  7. Slice and Serve: Once firm, remove from the fridge, slice into 16 bars, and serve or store in an airtight container.

Notes

  • Use parchment paper to easily lift bars out without sticking.
  • Press the mixture firmly in the pan for bars that hold their shape well.
  • Refrigerate long enough to allow bars to fully set for easier slicing.
  • Store bars in an airtight container at room temperature for up to a week or in the fridge for longer freshness.
  • Optional: Substitute mini chocolate chips with dried fruit or nuts for different flavors.
