These No Bake Cookies are a quick and delicious treat combining rich cocoa, creamy peanut butter, and hearty oats. Prepared on the stovetop and set without any baking, they're perfect for when you want a sweet snack ready in under 40 minutes with minimal hassle.

Ingredients

Ingredients

  • 1/2 cup (113g) salted butter
  • 1 3/4 cups (350g) granulated sugar
  • 1/3 cup (32g) unsweetened cocoa powder
  • 1/2 cup (120ml) milk
  • 1 tsp vanilla extract
  • 2/3 cup (160g) creamy peanut butter
  • 3 cups (275g) quick oats (do not use old fashioned oats)

Instructions

  1. Prepare Baking Surface: Line two baking sheets with parchment paper or set out approximately 29 cupcake liners to catch the cookies once dropped.
  2. Combine Wet and Dry Ingredients: In a medium 2.5 to 3 quart saucepan, combine the salted butter, granulated sugar, unsweetened cocoa powder, and milk.
  3. Heat Mixture: Place the saucepan over medium heat and stir frequently, cooking the mixture until it reaches a full boil.
  4. Boil Mixture: Allow the mixture to boil for exactly 60 seconds without stirring to achieve the right consistency.
  5. Add Remaining Ingredients: Remove the saucepan from heat immediately and stir in the vanilla extract, creamy peanut butter, and quick oats until fully combined.
  6. Form Cookies: Using a medium (2 Tbsp) cookie scoop or two spoons, drop spoonfuls of the mixture onto the lined baking sheets or into the cupcake liners.
  7. Set Cookies: Let the cookies rest at room temperature for about 20 to 30 minutes until they set. To speed this process up, place them in the refrigerator.
  8. Store: Store the set cookies in an airtight container at room temperature for freshness.

Notes

  • Use quick oats for the best texture; old fashioned oats may result in a different consistency.
  • Boiling the mixture for a full 60 seconds is crucial for the cookies to set properly.
  • Refrigerate to speed up the setting process if you’re short on time.
  • Store cookies in an airtight container to maintain their freshness.
